Quinoa Spaghetti with Fresh Garlic & Cherry Tomatoes
If there’s one thing you should know about us, it’s that we eat pasta. We don’t fear it – we honour our cravings by using alternatives to white pasta such as lentil, quinoa, kamut or spelt. These options are generally less processed, more nutrient dense and/or pack a higher protein content.
This staple dish in our home uses 3 raw ingredients for the sauce and 1 pack of pasta.
Prep time: 5 minutes
Cook Time: 15 minutes
Total time: 20 mins
Makes: 2-3 portions
• 2 cloves of garlic
• 3/4 quart of cherry tomatoes
• 4-5 tbs of olive oil
• 1 pack of quinoa spaghetti (or alternative)
• Salt & pepper to taste
• Optional: Top with fresh basil
1️⃣ Begin boiling a small pot of water for the pasta.
2️⃣ Heat a large pan on medium. Add oil when hot.
3️⃣ Cook the garlic and cherry tomatoes until they begin to blister and burst. Season with salt & pepper. Continue to cook until pasta is ready.
4️⃣ Add in your pasta once the water is boiling.
5️⃣ Once the pasta is cooked, strain and add it directly into the sauce. Season once again and top with basil, hot chilli and cheese if desired.
Enjoy this fresh garden treat. No promises for leftovers with flavours like this!
