Easy Taco Salad

Whether you have leftover taco meat you want to use in a different way, or you’re looking for a gluten free option to enjoy those great Mexican flavours, this salad is for you! It’s perfect for dinner or an easy meal prep lunch.

Makes: 3-4 salads


For the beef
* 1 lb of ground grass fed beef
* 1 onion
* 2 tbs avocado oil
* 1 tbs garlic powder
* 1 tbs chili powder
* 1/2 tbs smoked paprika
* salt & pepper to taste

For the salad
* 1 box of mixed greens
* 1 avocado
* 1 cup of cherry tomatoes
* 1/2 cup of kimchi (or more)
* salsa for topping


1️⃣ Finely chop the onions. Cut the cherry tomatoes in half and slice the avocado into cubes.

2️⃣ In a non-stick pan heat the avocado oil on medium heat. Add the onions and cook until translucent.

3️⃣ Add the beef an begin to separate it as it cooks. Add the garlic powder, chili powder and smoked paprika and mix evenly. Let cook 5-7 minutes.

4️⃣ Once cooked, add salt and pepper to taste and allow to simmer for another minute or two. Let the meat cool down a little so that it doesn’t wilt the salad too much.

5️⃣ In a bowl, mix the ground beef, salad, cherry tomatoes and kimchi. Top with avocado and salsa and mix through once again.
