This quinoa is a great lunch or side dish to enjoy at home or on the go. The sweet and citrus flavours make for a nice change to your usual plain quinoa. You can also use this recipe as a salad topper and replicate the seasoning as a salad dressing.
If you are watching your sugars, you can reduce or remove the maple syrup all together as the apples pack a nice sweetness on their own. You may also consider reducing the amount of cranberries.

* 1 1/2 cup red and white quinoa
* 1 honey crisp apple
* 2 green onions
* 1 avocado
* 1/4 cup maple syrup
* 1 medium orange or 1/2 cup of orange juice
* 1/4 cup of avocado oil
* 1/2 tsp garlic powder
* 1/8 cup of dried cranberries
* Salt & pepper to taste
1️⃣ Rinse quinoa in a colander & follow cooking instructions.
2️⃣ While the quinoa cooks chop the green onions, avocado and apple into small chunks/cubes. Juice the orange until you have about 1/2 a cup of liquid.
3️⃣ Move the quinoa to a large mixing bowl to cool. When room temperature, add the maple syrup, orange juice, garlic powder and avocado oil. Mix well.
4️⃣ Add in the chopped apples, onions, cranberries and mix well. The citrus from the orange juice should keep the apples from browning. Season with salt and pepper to taste.
5️⃣ Add the avocado fresh when consuming to prevent it from browning. Mix well and adjust seasoning to your liking. You should be able to taste the citrus more than the maple sweetness.
