Baked Wild Cod with Roasted Veggies
This recipe packs all your favourite sweet and savoury flavours, without the added preservatives, sodium and sugar! Enjoy this tasty white fish with some great roasted veg.
Everything cooks right in the oven at the same temperature. You’ll just need to watch the clock for the best time to pop each item in.

Ingredients
- 2 fillets of Wild Cod
- 2 peppers
- 1/2 butternut squash
- 1 medium onions
For the sauce:
- ⅛ cup of soy sauce
- ⅛ cup of honey
- ⅛ cup of olive oil
- 1 chopped scallion
- 1 minced garlic clove
Directions
1️⃣ Preheat oven to 375F. Mix all ingredients for the sauce together in a small bowl and whisk. Coat the fish in the baking pan and set aside.
2️⃣ Chop the butternut squash in half and bake half (or the whole thing to be used for a future meal), including the seeds.
3️⃣ Chop the peppers and onions and line on a separate baking sheet. Season with olive oil, salt and pepper.
4️⃣ Flip the squash after it has baked for 20 minutes. Pop the fish and veggie tray in the oven at this time for another 20 minutes (tossing the peppers and onions as needed).
5️⃣ Remove everything from the oven and let sit, covered, for 5-10 minutes. Top the fish with remaining sauce.
